Chunky Minestrone Soup

I love soup, especially Chunky Minestrone Soup. Unfortunately I’m almost on my own in our family. I say almost as Courtney will have a cream of chicken or tomato.

So when I got the inevitable question, the same I get every morning at least once from everyone “What’s for dinner mum?” I was almost afraid to answer. But answer I did!

Chunky Minestrone Soup.

I literally watched Colby’s shoulders slump and he shrank by a good 6 inches. It wasn’t looking good.

Chunky Minestrone Soup

Ingredients

3 large carrots diced

2 celery sticks sliced

2 large potatoes diced

1 large onion diced

2 garlic cloves crushed

2 tbsp tomato puree

400g can chopped tomatoes

400g can cannellini beans

1/4 head savoy cabbage or spring greens sliced thinly

100g spaghetti in 1-2 cm lengths

1 tbsp oil

2 l or 10 cubes vegetable stock

1 tsp mixed herbs

bread rolls to serve

Dice the vegetables into small pieces. Heat the oil and add the vegetables and garlic. Cook on a high heat for around 5 mins or until soft.

Add the tomatoes, stock, tomato puree and mixed herbs stir well. Bring to the boil then simmer covered for 10 mins.

Add the cannellini beans, spaghetti and cabbage and cook for a further 10 minutes. Serve with bread rolls.

 

So how did it go down? Well I succeeded with James, Courtney, Cerise and Casey. They all said they’d have it again!

But it was a no go with Colby, he just doesn’t like soup and today has proved it. Oh well 4 out of 5…. I’ll take that.
