Food prep and organizing is what I’ve been doing for the last few weeks.
I posted an 8 week meal plan last week as part of it, and it’s going well. I’m not on a diet as such but I have attempted to change when and what I eat.
I’ve stopped skipping breakfast, and added a real different variety of foods. Things I wouldn’t have had before and not all of it is totally healthy. Lots of fruit and different spreads, croissants and pancakes. I’ve been reaching for healthier snacks though, instead of chocolate and crisps, I’ve tried a few raw snacks and fruit flakes.
So that’s what I’ve been doing lately. Every week after I’ve got the weekly shop I’m sorting through it all and prepping as much as I can.
Fruit that can be washed like grapes are put in boxes, carrot sticks, celery and spring onions are cut and ready to eat.
So my plastics cupboard that has always got on my nerves, with boxes falling out, and never finding the right lids, has never been used so much.
I’m thinking of leaving all the boxes on the kitchen side. Maybe in a box or a basket, so there always there and not in the dreaded cupboard, out of sight out of mind.
I have no idea how long this will carry on, but I’d like to think it’s a permanent change. We’ve all been enjoying our food a lot more lately.
