Ratatouille

This weeks midweek meal is a Ratatouille. Now I have to admit this is a pretty new recipe for me, and I’m sure I’ve not made it true to original French recipes. There were a few veggies in there that we don’t usually have, and I did add in two chicken breasts diced.

Ingredients:

1 tbsp olive oil

2 Courgettes

1 Aubergine

2 Red Onions

1 Red Bell Pepper

1 Orange Pepper

3 Salad Tomatoes Quartered

1 400g Chopped Tomatoes

1 tsp Minced Garlic

1 tsp Basil

1 tbsp Mixed Herbs

2 Chicken Breast Diced (optional)

Salt and Pepper

Let’s Go

1/ Chop the courgettes, aubergine, onions, peppers and salad tomatoes into large chunks. You can also slice into thin slices or chop length ways into thin strips.

2/ Heat the olive oil in a pan, then add in all the vegetables. Fry for 5 mins on a medium heat.

3/ Add the garlic, basil, mixed herbs, salt and pepper and stir making sure all the veggies have a good coating. Continue frying for another 10 mins.

4/ Start cooking any rice, pasta or potatoes that you may be having with it.

5/ Add in the chopped tomatoes stir and continue simmering on a low heat for 15 mins.

6/ At the end add in any cooked meat if you are having any, we had chicken.

So this meal took around 45 minutes, including all the veg prep. It’s such a versatile meal. You can cook it in the oven as a tray bake, or in a slow cooker. You can add any meat you’d like or keep it simple for a great vegetarian meal.

We had ours with pasta, but rice or a potato dish would work well too. You can also have it without any side dish for a tasty lunch.

Ok the big question, did the family like it? In total honesty a few of them didn’t. I liked it a lot, but would use less courgettes, maybe just one. James said it was ok, Casey ate all of it and said it was nice. Colby, Courtney and Cerise didn’t really like it at all, they did eat it but weren’t overly fussed. I think it was the new veggies they’re not used too. And Carson bless him just wolfed it down.

So I would make it again but would maybe chop the veggies a bit smaller that may help haha.
