This week I’m popping up an Instant Pot Chicken Risotto recipe. I put this up on my channel a few weeks ago and wanted to put it here for reference (even for me).
I’ve only made Risotto about 2/3 times before, but this is the first time using the Instant Pot.
- 1 tbsp vegetable oil or cooking spray
- 3 small onions
- 1 yellow pepper
- 1 red pepper
- 75g button mushrooms
- 1 400g tin tomatoes
- 175g risotto rice
- 175g chopped bacon
- 350g chopped chicken breast
- 1 pt chicken stock
- 1tsp mixed herbs
- salt and pepper to taste
1/ Heat the oil in a frying pan and brown off the chopped chicken and bacon.
2/ Chop up the onions, peppers and mushrooms and add them to the chicken and bacon.
3/ Add the chopped tomatoes, the chicken stock, mixed herbs and salt and pepper.
4/ Stir well and bring to the boil.
5/ Transfer to the Instant Pot.
6/ Rinse the Risotto rice well and add to the Instant Pot.
7/ Stir well and cook in the Instant Pot on low for 2 hours.
8/ Most of the stock and juice will be absorbed at the end. Stir well and serve.
You can have it served with most things maybe garlic bread or hot rolls, we just had the Risotto and everyone enjoyed it. It was really tasty and we would definitely have it again.
